A non-destructive technique using infrared thermography and machine learning to monitor the dehydration of apple slices. By extracting thermal features and using classifiers like KNN, Random Forest, and SVC, the system achieves 92.2% accuracy in predicting dehydration states. This research also introduces 'Moist Metric', a real-time application for automated and efficient drying kinetics analysis.
